我国餐饮企业菜单信息存在问题及管理对策

摘    要:文章依据我国餐饮企业菜单管理现状,对菜单存在的未标明菜量与服务费、无制作方法及用料介绍、菜品结构不合理、重点菜肴不突出、菜单虚假等信息问题进行了探析,提出了坚持诚信经营方针、推行标准菜谱、控制菜品数量、注重菜单文化建设以及量力而为、专人负责、及时调整信息等管理对策,以期通过菜单信息管理的改善,达到提高餐饮企业竞争力与经营效益的目的。

On the Problems of Menus in Catering Businesses of China and Corresponding Management Strategies

Abstract:Based on an analysis of the status quo of menu management in China ,this paper presents their prob-lems such as unstated dish portions and service fees ,no introduction to preparation methods and ingredients , unreasonable structure ,no highlights of prominent dishes and false information ,etc.Targeting these issues ,the paper advances a series of managerial countermeasures including preventing fabrication , promoting standard menus,controlling the number of dishes ,stressing menu culture development ,appointing specialized menu su-pervisor and upgrading menu information in time so as to improve the competitiveness and profits of catering businesses .
