密蒙花黄色素性能研究

摘    要:对西双版纳密蒙花进行色素提取和性能测试。结果表明,密蒙花黄色素水溶性好,对光、热有一定耐受性,当pH为4~7 时,色素稳定性好,适于食品的pH范围。当色素溶液中添加NaCl、CuSO4 FeCl3 及苯甲酸、柠檬酸、蔗糖等化合物时,它们的协同和拮抗作用不显著。色素对氧化剂H2O2 的耐受能力较弱。密蒙花资源丰富,黄色素提取工艺简单,食用安全、无毒副作用,有开发应用前景

Abstract:Extraction and properties of the pigment of Buddleja Officinalis from Xishuangbanna were studied. Results show that the solubility of yellow pigment of B.Officinalis is good. It has definite light fastness and heat resisting property. When sodium chloride, copper vitriol, ferric chloride, benzoic acid, citric acid and sugar were added into the pigment solutions, effects of cooperation and antagonism were not obvious. Aqueous hydrogen peroxide solution had weak oxidation effect to the pigment. Natural resource of B.Officinalis is plentiful and the technique of extraction is simple. It is not toxic, safe to eat. The pigment has development prospect.
