摘    要:文庆鲤酶解蛋白(EAP)是一种高蛋白低脂肪的产品,通过对其氨基酸及无机质的测定分析,知其必需氨基酸和支链氨基酸含量丰富,且与非必需氨基酸的比例合理,同时富含铁、锌等元素.

Abstract:The enzymolyzic animal protein (EAP) of Wenqing Carp was a kind of high-quality product with high protein and low fat. Through analyzing its amino acids and minerals,we know its essential amino acid and branched chain amino acid were rich and the ratio of essential amino acid and non-essential amino acid was rational. The elements of Zn and Fe were rich too.
