月季花红色素的提取及性质研究

摘    要:研究了月季花红色素的提取条件及其金属离子因素等对该色素稳定性的影响,结果表明在0.1mol/L盐酸-乙醇溶液中易于提取,该色素属花青苷类色素,在酸性条件下对热、阳光和紫外光均有较好的稳定性。葡萄糖、蔗糖、淀粉、防腐剂、几种金属离子对该色素的色泽无不良影响,有些还有一定的增色作用,而色素对抗坏血酸、Fe3 、Fe2 、Sn2 比较敏感。

Abstract:The article reports the physicochemical properties and the condition of extracting the monthly rose red pigment. The result shows that the pigment can be well obtained by using acid extracting agent such as 0.1mol/L HCl-C2HqOH.the pigment is stable to heat, sunlight and ultraviolet under acid circumstances and belongs to Anthocyan's glucose,sucrose,preservative and several metalions have no harmful effects, and they have fortification effect on the tone of the pigment. The pigment is sensitive to Fe3 , Fe2 ,Sn2 ,the ascorbic acid.
