乳粉蛋白氮数字图像检测方法的研究

摘    要:分别采用三氯乙酸沉淀法和数字图像法对人为添加水解蛋白的乳粉中蛋白氮的含量进行了测定,结果发现数字图像法不受其影响,与三氯乙酸沉淀法测定结果具有较好的一致性,因此,数字图像法可以应用于乳粉蛋白氮的检测。该法与三氯乙酸沉淀法相比,具有快速和简便的特点,更加适合在乳粉流通领域中应用。

Abstract:The protein nitrogen content of milk powder added hydrolyzed protein was determinated by trichloractic acid deposition method and digital image method. It is shown that digital image method for protein nitrogen in milk powder couldn't be affected by hydrolyzed protein. It can be used on determinating the content of protein nitrogen in milk powder. With the advantages of high efficiency and easy operation, the method is more suitable to applied in the field of milk powder circulation.
