核桃多肽体外抗氧化活性研究

摘    要:以提取油脂后的核桃渣为原料分离出核桃蛋白,利用酸性、碱性、中性3种蛋白酶复合酶解核桃蛋白,制备水解度高的核桃多肽。通过测定核桃多肽的总还原能力、超氧阴离子自由基(O2-·)清除能力、羟自由基(·OH)清除能力、二苯代苦味酰基自由基(DPPH)清除能力,研究核桃多肽的抗氧化活性大小。结果表明,3种酶协同对核桃蛋白进行水解,水解度可达到45.58%,核桃多肽有一定的体外抗氧化活性,其总还原能力、对羟基自由基、DPPH自由基、超氧阴离子自由基清除率与质量浓度呈量效关系。

Antioxidant activity of walnut polypeptide in vitro

Abstract:The walnut protein was separated from walnut slag after extracting grease. The high degree hydrolysis walnut polypeptide was obtained through compound hydrolysis by acid, alkaline and neutral protease. The antioxidant activity of walnut polypeptide was investigated by measuring the superoxide anion free radical (O2-*) scavenging activity, hydroxyl radical (-OH) scavenging activity and DPPH scavenging activity. Results showed that the degree of three kinds of protease hydrolysate could reach 45.58%. Walnut polypeptide had certain antioxidant activity in vitro, the total re- ducing power, O2-*, ·OH and DPPH scavenging capacity was in concentration-response relationship with polypeptide concentration.
