| 摘 要： | 采用溶剂浸提法和紫外可见分光光度法,研究了苜蓿花色素的提取方法和稳定性。研究结果表明:苜蓿花色素的最适提取剂为盐酸V(盐酸)∶(V(水)=1∶1]-80%乙醇,该色素对热、日光、酸、大部分金属离子较稳定,但是对少数金属离子(如Fe3+,Cu2+)、氧化剂及还原剂不稳定。

| Abstract: | Extraction and stability of pigment from flowers of Medicago Sativa L were studied.Result showed that the proper extraction solvent was 80% ethanol in solution of hydrochloric acid,and the pigment was stable to heat,sunlight,acid and most metallic ions except Fe3 ,Cu2 ,oxidant and reductant. |
