摘    要:目前大曲质量鉴定包括感官指标、理化指标以及微生物指标。在企业内有各自的标准,但在行业内没有统一的标准。介绍了酿酒大曲目前国内的研究进展,以及大曲质量的一些相关标准。

Abstract:The identification of Daqu quality is involved with sensory indexes,physiochemical indexes and microbial indexes.Although each liquor-making enterprise has its individual standards,there is no unified standards in liquor-making industry.In this paper,domestic research progress in Daqu and the related quality standards were introduced.
