Abstract:With the development of science and technology, the types of food are becoming more and more abundant, and the problem that follows is that the contaminants introduced in food are becoming more and more complex, which makes food safety an important topic of global concern today, and rapid and effective detection Contaminants in food have become a hot spot in food testing. Surface-enhanced Raman spectroscopy (SERS) has gradually become a common method for detecting contaminants in food due to its extremely high sensitivity, rapid detection, fingerprint interpretation capabilities, and detection levels up to the molecular level. The development status of SERS substrates based on high hot spots, such as special morphological metal nanoparticles, solid-phase SERS platform, and SERS detection methods in agricultural and veterinary drugs, adulteration, natural toxins, and food-borne pathogens and other related food contaminants was discussed in this review.
