摘    要:采用傅立叶变换红外光谱(FTIR)法分析研究剑南春、贵州茅台(1#)及假贵州茅台(2#)白酒样品的红外光谱图。结果显示,不同香型白酒的冰冻干燥物在一维谱和二阶导数谱上均具有明显的指纹特征。真、假茅台酒干燥物的一维谱差异明显。该方法简便、快速,可直观的评价白酒产品的品质与真伪。

Abstract:Jiannanchun alcohol,Guizhoumaotai alcohol (1#) and fake Guizhoumaotai alohol (2#) were analyzed by Fourier transform infrared spectroscopy (FTIR).The findings indicated that the freeze-dry samples of alcohol with different odor type had evident fingerprint characters in FTIR spectra and their second derivative spectra,while the freeze-fry products of true and fake Maotai alcohol have obvious differences in FTIR spectra.It is a fast and direct method to analyze and evaluate the quality of these alcohol products by using FTIR spectroscopy.
