Abstract:The application researches of tea polyphenols, caffeine and tea polysaccharide, which are main active ingredients of tea leaves, are reviewed. The recent research progresses on active ingredients of tealeaves are introduced. The research prospect on application of the active ingredients and its extracting technology is also discussed.
