| 摘 要： | 风险分析是食品安全控制的理论依据,建立＂从农田到餐桌＂全程控制体系是实现食品安全管理的基础。联邦德国作为欧盟重要成员国之一,在食品安全控制理论和管理措施方面做了大量的工作。其经过重要的机构改革和管理探索,多层次协调合作的食品安全控制和管理模式逐步完善,食品安全监督和快速预警机制已经形成。本文主要介绍了联邦德国食品安全管理的宗旨、基本原则以及管理机构和食品链监管各机构的职责,重点阐述了联邦德国风险评估研究所在科学风险评估方面的工作职责,旨在深入了解联邦德国的食品安全控制体系,并对中国食品安全控制战略实施提供指导。
