烹饪高等院校工艺实验课的合理安排

摘    要:烹饪工艺实验课对烹饪工艺这个应用型专业来说非常重要,学校、教师、学生均需重视烹饪工艺实验课.目前,我国烹饪高等院校烹饪工艺实验课在课程设置、时间安排及与其他课程衔接方面都存在着一些问题.烹饪院校的教学管理者应当积极探索调整烹饪实验课教学计划和教学大纲,优化课程设置,加强对学生的实验要求,促进烹饪教育的改革.

Abstract:Culinary technological experimental curriculum is of great importance for such an applied special ty as cooking technology. Schools, teachers and students all should pay great attention to the experiments. Nowadays, there exist some problems in the aspect of course - setting, time arrangements and linking with other subjects. The teaching administration at culinary schools ought to make an active exploration on the readjustment of their teaching plans and teaching programs and the optimization of course - setting. Also at the same time the schools should set more strict demand for the student experiment quality so as to promote the reform of cuisine education.
