摘    要:综述了利用激光、静电、超声波、红外线、纳米工艺等物理方法对白酒、葡萄酒以及黄酒进行人工催陈的研究和应用现状,并对这几种物理方法的催陈作用进行了对比分析,同时对物理方法用于酿酒生产的前景进行了展望。

Abstract:The research and current application of accelerated ageing of liquor,wine and rice wine with several physical methods was summa- rized and compared in this paper,such as laser,static electricity,ultrasonic,infrared and nano-technic.Besides,the future application of above methods in alcoholic drink production was prospected.
