Screening and Evaluating Natural Antioxidant Using the DPPH Free Radical Method

It was one focus of food science study to screen and extract natural antioxidant from the plant. The methods to screen antioxidant and evaluate antioxidant activity were increasing. It was one of the most common methods to use a stable free radical - DPPH to screen and evaluate antioxidant. The principle, procedure, expressing results of determinations and the advantages and disadvantages of the DPPH method were reviewed. The factors influenced the determining results were also discussed.
