摘    要:葡萄皮花色苷属于黄酮类天然色素,不仅资源丰富,而且具有抗氧化、清除自由基、降血脂、抗突变、延缓衰老、预防肝损伤和老年痴呆、改善视力、保护心血管和神经系统等多种营养和保健功能。但葡萄皮花色苷的分子结构稳定性差,在加工和贮存过程中易受光、氧、温度、pH、金属离子等因素的影响而发生变化,这严重制约着葡萄皮花色苷的研究与应用。因此,对葡萄皮花色苷稳定性的研究成为食品、医药、化工和生物工程等领域重要的研究方向。本文综述了葡萄皮花色苷的分离纯化法、生理功能和稳定性研究进展,并指出其研究应用中存在的问题和发展趋势,为其深入研究提供参考。

Abstract:Grape skin anthocyanins belong to natural pigments flavonoids, they are not only rich in resources, but also has the function of antioxidant, eliminating free radicals, lowering blood pressure, anti-mutagenic, anti-aging, preventing liver damage and dementia, improving eyesight, protecting cardiovascular and nervous systems, and other nutritional and health functions. However, the molecular structure stability of the grape skin anthocyanins is poor, and easy to changes with the factor of light, oxygen, temperature, pH, metal ions and others in the processing and during storage, which severely restricts the research and application of grape skin anthocyanins. Therefore, the study of grape skin anthocyanins stability become an important research direction in food, pharmaceutics, chemical engineering, bioengineering and other fields. The paper reviewed the grape skin anthocyanins separation and purification method, physiological function of progress and stability, noted its application in research problems and trends, providing reference for further study.
