摘    要:红曲的降血压、降血脂、抗氧化等保健作用越来越受到人们的重视。利用微型啤酒生产线在鲜啤酒生产过程中添加红曲参与糖化发酵,对生产红曲保健鲜啤酒进行了初步的研究试验。

Abstract:The healthy function of red koji, such as reducing blood pressure, blood fat, and antioxidation, have been more and more valued nowadays. Red koji was added to join in the saccharification and fermentation during the draft beer production in the minitype beer production line. And the development of red koji health draft beer was preliminarily studied.
