豆豉纤溶酶研究概况及进展

摘    要:豆豉纤溶酶是从我国传统发酵食品豆豉分离得到一种具有强烈纤溶作用丝氨酸蛋白酶。该文对豆豉纤溶酶产生菌筛选与诱变、发酵工艺、酶分离纯化、理化性质、分子生物学研究进行综述;同时还简介豆豉纤溶酶活性测定方法和抗栓、溶栓作用,并对其应用前景进行展望。

Abstract:Douchi fibrinolytic enzyme is a kind of serine protease from a traditional fermented food of China.It can dissolve fibrin effectively.This paper introduces the screening and mutation of fibrinolytic enzyme–producing strain from Douchi,the fermentation,purification of enzyme,physical–chemical properties and molecular biology.The determination of enzyme activity,fibrinolytic function and application foreground are also reviewed in this paper.
