肠膜明串珠菌发酵糙米乳研究

摘    要:利用肠膜明串珠菌进行糙米乳乳酸发酵,研究其生长特性;结果表明,该菌株能在糙米乳中发酵产乳酸,在接菌量为5%、发酵温度为30℃、培养22 h后发酵产乳酸水平可达到最佳。

Abstract:Fermentation characteristics of a Leuconostoc mesenteriodies stain were studied using brown rice milk as culture medium.The result showed:leuconostoc mesenteriodies could ferment in brown rice milkt,he optimum output of lactic acid was attained at :inoculum concentration was 5%i,ncubated at 30℃ for 22 h.
