摘    要:从浓香大曲中分离筛选得到一株产酯化酶的菌株,鉴定并研究了其产酯化酶的特性。利用微生物分离技术筛选得到产酯化酶的红曲霉FBKL3.0018,根据形态特征、培养特征、生理生化特征并结合分子生物学方法进行鉴定。结果鉴定菌株FBKL3.0018为红曲属的紫色红曲霉(Monascuspurpureus)。菌株的酯化力较高,可用于生产酯化酶制剂和高酯化大曲等。

Abstract:The strain producing esterifying enzyme was isolated from luzhou-flavor daqu,and identified and researched it's characteristic of producing esterifying enzyme.We screened a strain monascus FBKL3.0018 by microorganism separate techniques,and combined with morphological characters,cultural characteristics,physiological and biochemical characteristics and molecular methods to identify it.The strain monasens FBKL3.0018 was identified as Monascuspurpureus.The strain is a high esterifying ability,it can be applied to produce esterifying enzyme preparation and Daqn high esterifying ability.
