信阳毛尖茶的化学成分

摘    要:信阳毛尖茶是中国传统名茶之一,品质优异。对信阳毛尖茶的主要化学成分进行了综述和分析。结果表明,信阳毛尖茶的茶多酚含量、儿茶素含量及非酯型儿茶素比例较高,氨基酸含量、咖啡碱含量、可溶性糖含量也比较高,形成了信阳毛尖茶鲜浓、爽口、耐泡的滋味特征;叶绿素含量高于多数嫩度相近的名绿茶,使其具有干茶色泽翠绿的品质特征;信阳毛尖茶还含有丰富的无机元素。

Abstract:Xinyang maojian tea is one of the Chinese traditional famous teas. The main chemical components of xinyang maojian tea were summarized and analysed. The results showed that, contents of tea polyphenols, catechins and simple catechins proportion were higher; contents of amino acids, caffeine, and soluble sugar were higher too, making xinyang maojian tea tast delicious, refreshed and soaking resistant; chlorophyll content was higher than many famous green tea whose tender are similar to it, which makes its dry tea looks emerald green; xinyang maojian tea also included abundant inorganic elements.
