摘    要:油菜籽是世界第三大油料,也是我国食用植物油的主要来源和潜在的饲用蛋白源。油菜籽加工过程中,大部分的菜籽多酚留在副产品菜籽粕中,使其合理利用受到制约,尤其作为动物饲料时,不仅其色泽深黑不受欢迎,而且其辛辣味和涩味严重影响动物的适口性,降低动物对营养物质的消化和吸收,对动物体有毒性作用。研究综述了菜籽多酚的组成、结构、抗营养作用机理和减量处理措施,以期为提高菜籽粕利用价值,开发优质蛋白资源提供参考。
