摘    要:根据发达国家食品生产的发展趋势,结合我国入世形势和发展需要,论述了安全性乳与乳制品的重要性,评价及其不安全因素的来源,提出在乳制品生产过程中建立完善的安全控制体系。

Abstract:According to the developing trends of food production in developed nations, importance of safe dairy and dairy products, assessment and origins of unsafe factors were discussed in associated with China' s entry into WTO, and an integrated safety-control system in dairy processing were put forward as well.
