摘    要:夹层窖泥发酵是在酒醅中用窖泥加一间隔层,以增大酒醅与窖泥的接触面积(可增加45%),从而提高酒质。采用人工培养成熟的窖泥,加入大曲粉拌合,均匀地抹在竹帘上,再盖上编织布,即可使用。应用夹层窖泥后,总酸总酯均有所提高,应用当排即见效果,但窖泥使用一排后应及时补充己酸茵及水分。

Abstract:Interlayer pit mud fermentation referred the addition of pit mud layer in fermented grains to increase contact area (increased by 45 %) between fermented grains and pit mud, the application of which could improve liquor quality. Man-cultured mature pit mud mixed with Daqu grains and then daubed equally on bamboo curtain and coated with fabric braided for use. Its application could effectively increase total acids content and total esters content and achieve satisfactory effects immediately.Nevertheless,caproic acid bacteria and water should be supplemented timely after the first application of pit mud.
