| 摘 要： | 对罐装牛奶保藏期中产生缺陷风味的原因进行了详细的研究与分析，通过对原料、内容物的检测结果、包装材料对照试验等多方面的分析，确认包装材料中溶出的铁离子和锡离子是引起内容物产生异味的主要原因。

| Abstract: | A detailed research on cause of deficiency odor during self-life of canned milk is given, which though a lot of experiments including anlysis of raw material, content, packing can ect, and conclude that iron and stannum dissolved from packing can are main reason that bring the deficiency odor. |
