| Abstract: | Yanghe Daqu Liquor is regarded as the typical representative of "Jianghuai Branch" of Luzhou-flavor Daqu liquor because of its specific liquor style of "sweet, soft, mild, clear and aroma". The formation of its liquor style is dependant on the natural environments and some unique technical conditions in cluding the pre-steaming of raw materials and auxiliary materials, aging high temperature starter and artificial aged pits etc.(Tran.by YUE Yang) |
