江淮地区大米质量品质分析

摘    要:以江淮地区大米作为研究对象,对比市售三种不同品质大米,从大米外观品质、理化指标及加工品质三方面进行研究,探究江淮地区大米质量品质并筛选出优质地方特色大米。结果表明:黄粒米及整精米率对大米外观品质影响较大,垩白度相差较大;理化品质中大米蛋白质含量与食味值品质呈负相关,样品大米的含水量15.5%,直链淀粉含量为13.5%~18.2%,符合国标优质大米要求;糊化特性中优质大米的崩解值的绝对值较大;质构特性中硬度适中,弹性良好。江淮地区大米质量品质均高于对照组中低品质大米,部分大米质量与优质大米接近可作为地方优质大米推出。对江淮地区大米进行质量品质分析,有利于推动实施优质粮油工程,树立地方特色品牌,为江淮地区大米质量标准建设提供借鉴。

Rice quality analysis in jianghuai area
Abstract:Taking rice in Jianghuai area were selected as research objects, three kinds of commercially available rice were used as the control group. From the three aspects of rice appearance quality, physical and chemical indicators and processing quality, we explored the quality of rice in jianghuai area and select high-quality local characteristic rice. The experiment found that the rate of yellow rice and head rice yield had a great influence on the appearance quality of rice, and the difference in degree of chalkiness was large. The protein content of rice in physicochemical quality is negatively correlated with the quality of taste value. The moisture content of the sample rice is less than 15.5%, and the content of the amylose is 13.5%-18.2%, which meets the requirements of the national standard high quality rice; The absolute value of the disintegration value of high-quality rice in the gelatinization property is large; among the texture characteristics, the hardness is moderate and the elasticity is good. The quality of rice in Jianghuai area were higher than that of low-quality rice in the control group. Some rice quality in Jianghuai area and high quality rice were close to being available as high-quality local characteristic rice.The quality analysis of rice in jianghuai area will be beneficial to the implementation of high-quality grain and oil project, the establishment of local characteristic brand, and the construction of quality standard of rice in jianghuai area.
