多孔陶瓷载体固定化酵母的研究

摘    要:在应用多孔陶瓷载体固定化酵母酿造啤酒的试验研究中,查明了适合固定酵母的载体形态结构以及载体的最佳用量。讨论了酵母在多孔陶瓷载体中的生长繁殖条件、发酵规律。证明了在啤酒酿造中采用多孔陶瓷载体固定酵母细胞明显优于海藻酸钙凝胶载体。

Abstract:By the research on beer brewing using saccharomyces cerevisiae immobilized in porous ceramics carrier,the appropriate morphology structure and optimal amounts of the carrier were obtained.The growing and breeding conditions and the fermemtation law of the yeast immobilized in the carrier were discussed.The advantages of the yeast immobilized in the carrier were demonstrated in camparison with S.cerevisiae immobilized in calcium alginate gel in bear brewing.
