茶色素提取工艺的初步研究

摘    要:通过茶叶浸提的提取率的比较,分析了温度和酸碱性对茶色素提取率的影响,结果表明在碱性条件下提取的茶色素提取率较好,符合当前社会的环境要求。茶色素最佳提取工艺:茶叶在30%条件下浸提30min,碳酸氢钠用量为10g/L。

Abstract:By comparing the extraction rate of tea , analyzing the influence of the temperature,acidity and basieity on the extraction rate of tea, the results showed that under alkaline conditions with the better extraction rate of tea pigments, and it met the requirements of the current social environment, the optimum extraction conditions of tea pigment were as follows: extraction temperature 30 ℃, extraction time 30 min,sodium bicarbonate 10 g/L.
