摘    要:对不同年限、不同阶段生产的西凤大曲进行了理化指标和感官质量对比分析,同时对不同大曲的酶活力和大曲的使用量、生产用曲与搭曲培养中酶活力与大曲生产数量的关系作了分析;提出了提高西凤大曲质量的措施。
