瓶装保健酒沉淀原因分析

摘    要:瓶装保健酒产生沉淀的原因有:⑴水质硬度大;⑵采用铝质容器贮酒;⑶基酒、勾兑用水等溶有大量氧;⑷温差、酒损和辐射等。解决措施为调整配方,提高产品非生物稳定性;提高酒精度,降低含糖量;改进工艺方法,添置处理设备,水质软化处理,改用不锈钢罐等。

Abstract:The causations of precipitate in bottled health wine were as follows: 1. high water hardness; 2. application of aluminous containers for wine storage; 3. large amount of oxygen dissovled in basic liquor and water for blending etc; 4. temperature difference, wine damage and radiation etc. The methods of resolution included revision of the formulation, improvement of non-biological stability of the product, enhancement of alcoholicity, reduce of sugar content, technical innovation, addition of management equipments, water softening management and application of stainless containers etc.(Tran.by YUE Yang)
