| 摘 要： | 用叔丁基对苯二酚 (TBHQ)和高级脂肪醇可以制备一种TBHQ的衍生物——— 2 叔丁基 5 十八烷基 1,4 对苯二酚 (DTBHQ) ,该衍生物熔点为 147 5～ 149 5℃ ,大白鼠经口LD50 =40 0 0mg/kg。DTBHQ具有较好的耐热性和较好的抗氧化活性 ,在相同条件下的抗氧化能力强于BHA、BHT、TBHQ和VE,猪油中添加DTBHQ后 ,w(DTBHQ) =0 0 2 %时 ,猪油的氧化稳定性分别提高了 6 46倍 (10 0℃ )、4 13倍 (12 0℃ )和 1 71倍 (140℃ ) ,w(DTBHQ) =0 0 4%时 ,猪油的氧化稳定性分别提高了 9 2 0倍 (10 0℃ )、7 0 8倍 (12 0℃ )和 2 6 5倍 (140℃ )。DTBHQ在 185℃处理 4h ,仍可使猪油的氧化稳定性提高 3 36倍 [w (DTBHQ) =0 0 2 % ]和 4 78倍 [w(DTBHQ) =0 0 4% ]。

| Abstract: | tert Butylhydroquinone (TBHQ) and higher alcohols were used to synthesize a derivative of THBQ——2 teriary butyl 5 octadecyl 1,4 hydroquionone(DTBHQ).Its melting point is 147.5-149.5 ℃ and LD 50 is 4000 mg/kg.DTBHQ has good heat resistance and obvious antioxygenic activity.Its antioxygenic activity is stronger than BHA,BHT,TBHQ and V-E.After adding DTBHQ,the oxidation stability of lard increased 6.46(100 ℃),4.13(120 ℃) and 1.71(140 ℃) times when w (DTBHQ)=0.02%,and 9.20(100 ℃),7.08(120 ℃) and 2.65(140 ℃) times when w (DTBHQ)=0.04%.DTBHQ also shows certain antioxygenic activity at high temperature.After treated 4 h at 185 ℃,DTBHQ also improved the oxidation stability of lard by 3.36 times when w (DTBHQ)=0.02% and 4.78 times when w (DTBHQ)=0.04%. |
