摘 要: | 对阳荷红色素分别在自然光、温度、pH值,Ca~(2+)、Zn~(2+)、K~+、Na~+、Fe~(3+)等金属离子存在条件下进行稳定性的研究。结果表明,酸性条件下阳荷红色素色泽较好,Ca~(2+)、Zn~(2+)对该色素的稳定性影响较小,K~+、Na~+、Fe~(3+)对阳荷红色素稳定性影响较大。研究为阳荷红色素提取过程中应注意的事项及其稳定性研究提供必要参考。

Abstract: | The experiment studied the stability of th e pigment that when light、 temperature、 pH、Ca~(2+)、Zn~(2+)、K~+、Na~+、Fe~(3+) etc. metal ions exist respectively.The result showed that this red pigment's color was better under acidic conditions, it was less stable to K~+、Na~+、Fe~(3+) metal ion,the stability of pigment was very affected by Ca~(2+)、Zn~(2+)metal ion.The study provides some references that the study of the stability and the attentions when the red pigment was extracted from zingiber strioatum. |
