淮扬"秋瑞宴"特色浅析

摘    要:淮扬"秋瑞宴"是扬州市为接待第六届世界华商大会的2000名嘉宾而精心制作的盛大午宴。其富有文学色彩的宴名与体现民族礼仪的精致菜单,显示季节特色的原料与色泽搭配,多样的烹法与起伏的口味,规范化操作和营养搭配,既体现了淮扬菜深厚的文化底蕴,又适应了现代饮食消费的需求。

Abstract:Huaiyang cuisine "Qiu Rui Banquet" is a magnificent lunch elaborately prepared by the city of Yangzhou to receive 2000 distinguished guests participating in the Sixth World Overseas Merchant Conference. The banquet's name full of cultural color, the menu both delicate and fully displaying the national etiquette, the ingredient choice and color match embodying the seasonal characteristics, the adoption of multi|cooking methods and the variety of dish tastes, and in addition, the standardized cooking operation and nutrient arrangement, all in all, not only reflect Chinese deep cultural background of Huaiyang cuisine in every aspect, but also conform to the demands of modern diet consumption at the same time.
