动力学理论预测食品包装货架寿命模型的研究

摘    要:探讨了不同反应级数的食品品质函数的形式及其确定方法,总结了5种以食品品质损失动力学模型为基础的食品货架寿命预测的研究方法,即Arrhenius方程、WLF方程、Q10模型、Z值模型法和WHA方法。

Abstract:The form of food quality function with different reaction order and its determination method was discussed. The food shelf life prediction methods based on 5 kinetic models of food quality loss were summarized,which were Arrhenius model,WLF equation,Q10 model,Z-value model,and Weibull hazard analysis.
