| 摘 要： | 对Ｎｉｓｉｎ对豆奶和豆腐的保鲜效果进行研究。结果表明，Ｎｉｓｉｎ可显著降低豆奶和事瘁保的细菌数，在冷藏条件下可将豆奶的保存期由４天延长至１０天，将豆腐延长至７天。

| Abstract: | Nisin was used in order to extend the shelf life of soy - bean products. The results showed that Nisin could effectively inhibit the growth of becteria. Adding 300U/g of Nisin could obtain the best effect. |
