摘    要:半乳糖苷酶催化半乳糖苷键的水解,包括α-半乳糖苷酶和β-半乳糖苷酶。就半乳糖苷酶的应用研究,尤其是半乳糖苷酶遗传修饰酵母在酒精发酵中的作用进行了简要综述。

Abstract:Galactosidases are galactoside hydrolyzing enzymes which include α-Galactosidase and β-Galactosidase. The applications of these enzymes, especially the functions of genetically modified yeasts in ethanol production are reviewed briefly.
