山葡萄新品种"左优红"果实色素及干红酒理化指标检测分析

摘    要:测试结果表明;"左优红"发酵原酒的白藜芦醇、矿质元素、维生素和人体必需的8种氨基酸含量均高于"赤霞珠",而氨基酸总含量低于"赤霞珠";果实色素和单宁的含量近似于赤霞珠.

Abstract:The results showed that resveratrol, mineral elements, vitamine and essential amino acids in Zuoyouhong were higher than those in Cabernet Sauvignon, while total content of amino acid was lower than that in Cabernet Sauvignon. The contents of fruit pigment and tannin in Zuoyouhong were equal with those in Cabernet Sauvignon.
