摘    要:建立了一种食品中反式脂肪酸含量的测定方法,以酸水解法提取食品中脂肪酸,用傅立叶变换红外光谱仪对反式脂肪酸含量进行了快速测定,回收率达到89.26%~106.51%,相对标准偏差2.29%,结果重复性好,准确可靠。

Abstract:A method for the determation of trans fatty acids in foods was established.Study on extracting fatty acids form foods through acid-hydrolysis method,rapid determanation of trans fatty acids by FTIR,the recovery rate was 89.26%~106.51% and the relative standard deviation was 2.29%,the method was simple and accurate with a good reproducibility.
