摘    要:近些年来,随着我国改革开放的深入和人民生活水平的提高,人们对食品安全提出了越来越严格的要求.同时由于人们环境意识的日益增强以及绿色化学的兴起,使新型绿色溶剂离子液体广泛应用于食品工业中并且逐渐发挥出巨大的作用,尤其是在淀粉和纤维素改性中的应用.结合国内外相关文献对离子液体在淀粉和纤维素改性中的应用进行总结.在总结的过程中,对淀粉和纤维素在离子液体中改性的发展历程、机理以及相关特点等方面进行论述,探讨了离子液体对淀粉和纤维素改性的影响,并阐述了离子液体在淀粉和纤维素的改性的发展前景和限制因素.

Abstract:In recent years, with the deepening of reform and opening up and the improvement of people's living standards, people put forward more and more stringent requirements on food safety. At the same time, due to the increasing environmental awareness and the rise of green chemistry, the new green solvent ionic liquids are widely used in the food industry and gradually play a huge role, especially in the modification of starch and cellulose. The paper summarizes researches of the modification of starch and cellulose combined with related literature at home and abroad. In this paper, the phylogeny of the modification of starch and cellulose in ionic liquids, mechanism and related features are discussed, and probes into the influence of ionic liquids on the modification of starch and cellulose, and expounds the ionic liquids in the prospects for the development of the modification of starch and cellulose and the limiting factor.
