摘    要:食品安全十分重要,食源性致病菌引起的疾病是食品安全与人体健康的第一大敌。本文从传统微生物方法、免疫学方法、核酸方法和物理/化学特征方法 4个方面分析了近年来主要的食源性致病菌检测方法的检测原理、优缺点及应用进展,发现在广大条件有限的基层,快速筛查食源性致病菌领域仍有较大的空白。并对生物传感器技术的现状、存在的问题及未来的研究方向进行了总结及展望。提出了可行的改进方案以填补这一空白,从而更好地保障食品安全。

Abstract:Food safety is very important for people''s lives. The diseases caused by foodborne pathogens are the biggest enemy of food safety and human health. In this paper, the principles, advantages, disadvantages and application progress of various types of detection methods for foodborne pathogens were analyzed which included traditional microbiological methods, immunological methods, nucleic acid-based methods and physical/chemical methods. It was found that there was still a large gap in the field of rapid detection of foodborne pathogens in grassroots with limited test conditions. In addition, the present situation, problems and future research directions of biosensor technology were summarized and proposed. The feasible improvement plan was put forward to fill the gap so as to guarantee the food safety better.
