Abstract:Instant noodles is one of the most welcome convenience food which are consumed daily by people,especially in Southeast Asia.Because of its convenience and unique flavor,most people like to eat them.In this paper,the sensory evaluation of instant noodles,the factors affecting sensory quality and sensory analysis methods are summerized,to its more comprehensive understanding of the development.
