太湖银鱼的速冻加工与质量控制

摘    要:对太湖银鱼为原料、经速冻而成的出口冻银鱼的生产加工工艺流程以厦相关的操作要点进行了探讨与研究,并且提出了产品的理化与微生物等质量指标和产品等级标准;分析研究了产品的质量安全控制管理体系。

Abstract:A quick-freeze technique to produce frozen Neosalanx taihuensis using Taihu lake icefish as raw materials was introduced in this paper, the product standards including microbial and physical-chemlcal requirements were determined, and a HACf;P quality control system was also analyzed for production of frozen Neosalanac taihuensis.
