| 摘 要： | 研究了特丁基对苯二酚（TBHQ）的衍生物（DTBHQ）的抗氧化能力，发现它具有良好的抗氧化性能，其抗氧化能力强于BHA，BHT，TBHQ和VE，在高温下亦有较强的抗氧化能力。DTBHQ对Fe^3 有一定的螯合作用。含4ppmFe^3 的猪油中分别添加0．02％和0．04％的DTBHQ，可使其氧化稳定性提高4．5和7．7倍，与柠檬酸（CA）联合使用，表现出很强的抗氧化协同作用。

| Abstract: | The antioxidant activity of a derivative of TBHQ(DTBHQ)was studied.It was found that DTBHQ showed obvious antioxidant activity,stronger than BHA?BHT?TBHQ and V E,also showed strong antioxidant activity at high temperature.DTBHQ showed certain chelating effect to ferric iron.0.02% and 0.04% DTBHQ improved the oxidant stability of lard containing 4ppm ferric iron by 4.5 and 7.5 times respectively.It showed a very strong antioxidant synergetic effect with Ca. |
