| 摘 要： | 在专家咨询调查的基础上,采用模糊聚类分析方法,对主食馒头进行了客观分类特性研究,论证了软式、中硬式和硬式馒头的3种基本类型的差异.结果表明,当馒头分为以上3类时,其在硬度和比容等指标上差异明显. |

| Abstract: | In order to establish the classification system of Chinese Mantous,the fuzzy clustering analysis method was adopted to discover the significant differences between Chinese Mantous of different types.According to the differences of hardness value and specific volume of Chinese Mantou samples,Chinese Mantous could be classified into three basic types,i.e.soften type,medium type and harden type. |
