摘    要:干燥对谷物中淀粉和蛋白质理化特性的影响是谷物加工品质发生变化的内在原因。从淀粉粒的形态和晶型、溶胀特性、热特性、糊化特性等方面论述了干燥对谷物中淀粉的影响。从溶解性、蛋白质亚基变化等方面论述了干燥对谷物中蛋白质的影响。

Abstract:The effects of drying on the physicochemical properties of the main components of cereal determined its processing quality.We reviewed the effects of drying on the morphology and crystal,swelling property,thermal property and pasting properties of the starch granule,and also summarized the effects of drying on the solubility and subunits of cereal protein.
