| 摘 要： | 通过论述冻结装置的技术特征及分析影响其性能的因素,重点揭示了冻结装置存在的问题,提出了提高其效率的有效途径.并强调指出解决冻结食品"冻结机会均等"问题是速冻装置设计的技术关键.还对速冻装置的发展趋势作了概括.

| Abstract: | This paper discusses freezing plant technology characteristics and analyses the factors affecting their efficiencies, further giving some measurements to improve quick freezer performance after revealing their existing prl~ems. It is especially stressed that the key tech- ntology for designing freezing plants is to make all food in the same freezing conditions. In addi- tion, the trend for quick freezer is stated simply. |
