摘    要:食品安全检测技术是食品质量保证和食品安全管理的重要基础,主要以仪器检测方法为主。标记免疫层析技术是建立在层析技术和和抗原-抗体特异性免疫反应基础上的一项新兴免疫检测技术,具有灵敏度高、特异性强、使用便捷、检测速度快等特点,被广泛应用于食品安全快速检测过程中。本文对胶体金标记免疫层析技术、量子点标记免疫层析技术、上转换发光标记免疫层析技术等在食品安全检测领域的应用进行了综述,通过分析目前各种标记免疫层析技术的优点和不足,提出了发展方向,以期为我国食品安全快速检测技术的发展提供文献支持。

Abstract:Instrument detection methods are predominant food safety testing technology which is a significant foundation for maintaining food quality and food safety management. Immunolabelling chromatographic technique, a new immunosorbent assay based on chromatography and specific immune responsible between antibody and antigen, is widely used in food safety detection due to its high sensitivity, specificity, simplicity, and high determination speed. In this paper, the application of gold immunochromatographic technique, quantum dots immunochromatographic technique, up-converting phosphor immunochromatographic technique in food safety detection were detailed summarized, and the development direction of immunolabelling chromatographic technique was given after the advantages and disadvantages were analyzed. It provided the bibliographic support to promote the rapid detection of food safety in our country.
