摘    要:无损检测技术因具有非破坏性,快速,精准的特点在肉类研究中得到了广泛应用。本文简要介绍了电子舌和电子鼻、近红外光谱、拉曼光谱、低场核磁共振等新型无损检测技术的原理,详细论述了其在肉制品品质检测中的应用情况,并对其应用前景进行了展望。

Abstract:Non-destructive testing technology was applied widely in meat science research for its characteristics of nondestructive,quick and accurate detection.In this paper,the principle of electronic nose,electronic tongue,near-infrared spectroscopy,Raman spectroscopy and low-field nuclear nagnetic nesonance(low-field NMR) were introduced briefly and their applications in meat science were also discussed.Moreover,the application trend was predicted.
