摘    要:琼胶,是存在于琼胶型红藻多糖细胞壁中的一类多糖,它以其独特的凝固性和稳定性广泛的应用在食品工业、化学工业、科学研究及其它领域。本文建立了红藻门伊谷藻琼胶的提取工艺。对热水浸提法,酸预处理浸提法,碱预处理浸提法进行比较,应用单因素试验和响应面优化试验,确定了最佳的提取和漂白工艺。试验结果表明:1.2%的NaOH溶液,料液比1∶30,高压锅121℃提取2h。胶体在有效氯浓度0.18%,pH为5.39的次氯酸钠溶液漂白10min。该工艺的琼胶提取率高,所提取的琼胶品质良好,与石花菜属琼胶品质相当。

Abstract:Agar is a class of polysaccharide which exists in the cell wall of agar-type red alga.It is widely applied in the food industry,chemical industry,scientific research and other fields.It has unique solidification and stability.The extraction methodology of agar from Ahnfeltia pliacta was studied.Methods of hot water extraction,acid pre-extraction and alkaline pre-extraction were compared.One-factor-at-a-time method and response surface method were carried out to establish the optimal procedure of extraction and bleaching.The result indicated that the optimum extraction condition was:121℃ for 2 hours,NaOH concentration 1.2%,and the ratio of material to solvent 1 ∶30.The colloid was bleached for 10 minutes in the solution of sodium hypochlorite with a chlorine concentration of 0.18% and pH value of 5.39.Based on this research,the high yield and good quality of agar can be prepared and is comparable to those of agar from Gelidiella.
